Juice or smoothie? If you had to choose, which would you pick? I tend to make smoothies more often (maybe because my juicer has since retired) but I enjoy the taste of both. If you are one of those people who like both, then you’re in luck! Because today I’m making a Super Greens Power Juice. It’s a cross between a juice and smoothie — it has the taste of a juice but the richness of a smoothie. It’s filled with all things good for you like kale, celery, apple, lemon, and parsley, and sure to make you feel good from the inside out!
What’s the difference between a juice and smoothie? Typically juices are made from extracted liquids of a fruit or vegetable. Smoothies are the blended form, using the pulp and fiber of the fruit / vegetable. Juices contain most of the vitamins and minerals of the produce and smoothies have that plus the fiber. I love juices for cleansing or when I need something bright and refreshing. Smoothies I make more often because they are more filling and I like to play around with ingredients. There are so many different kinds of things you can put in smoothies, so it’s a great way to get creative with your food! Today’s recipe is all about creating the bright and refreshing taste of a juice with the richness of a smoothie.
For this recipe, the base is coconut water. You could use any liquid you like, but I like the bright and refreshing taste of coconut water. I use kale, apple, celery, lemon, and parsley. Parsley in a smoothie? Yes, it sounds a little odd, but trust me when I tell you it’s delicious and enhances the flavor of the juice. It doesn’t make it bitter or funky tasting. The apple adds sweetness and the banana, which is optional, adds additional sweetness and richness. The celery has a beautifully mild but crisp flavor. The outer layer if quite fibrous, so if you're not in a rush, I suggest you peel it. The banana will thicken the smoothie, but if you prefer the consistency more like a juice, leave it out. You could totally use a juicer with this recipe, you just may need to add more ingredients.
This Super Greens Power Juice is packed with Vitamin K, Vitamin A, Vitamin C, and fiber, which is good for healthy skin, digestion, and the immune system. Parsley has a ton health benefits and is a rich source of antioxidants. Lemon is a great detoxifier. It’s perfect drink to start your day. In a high-power blender add the coconut water, celery, parsley, apple, lemon, kale, banana (optional), and ice cubes (optional). Blend until smooth and desired consistency is reached. For a thicker smoothie, add more banana, thinner -- add more coconut water. Enjoy!
