With an abundance of this stalky, bitter vegetable, I wanted to make a healthy and delicious recipe that could be whipped up in minutes! The result: my Rhubarb Strawberry Ginger Juice. Filled with all the juiciest fruits, like strawberries, watermelon, and pineapple, this amazingly fruitful and refreshing juice will leave you feeling revitalized and ready to conquer the day!
Rhubarb is a tart and tangy vegetable. It’s shaped like a large, red celery. It’s stalks are tough and fibrous, and like celery, the vegetable yields a lot of liquid. This is great for juicing. Often times, rhubarb is paired with strawberry in pies and pastries. Its bitter flavor compliments sweet fruits wonderfully, making for perfect seasonal dessert. But for those looking for a healthier spin, this recipe is for you!
To make this juice you will need a juicer. I start with one stalk of rhubarb. I add two handfuls of strawberries and some freshly cut pineapple for a sweet and tart flavor. A piece of ginger will heat things up. And finally a good two cups of fresh watermelon with add a light, saccharine juice. Watermelon is mostly made up of water, so it is great for juices. It’s sweet but not dense, so it doesn’t overpower this Rhubarb Strawberry Ginger Juice. The rhubarb is slightly bitter, the strawberry sweet and succulent, and the ginger, a little spicy. This juice is filled with Vitamin A from the rhubarb, Vitamin C and K from the strawberries and pineapple, and anti inflammatories from the ginger. It’s an immune-boosting and anti-oxidant filled powerful concoction, sure to make you feel restored from the inside out.
I’ve been drinking a lot of juices lately. I go through waves of it, but right now my wave is telling me JUICES!
