If you haven't already figured out, I love ginger and I love smoothie bowls. Smoothie bowls are a great and healthy way to get creative with your food. I usually go for green smoothies, but today I made one with seasonal fruit.
For this recipe, I added raspberries, cashew milk (you can use any nut or soy milk you'd like!), frozen banana for a thicker texture, coconut flakes, and ginger for a refreshing, crisp taste. You could skip the ginger if you'd like, but I like the added depth of flavor it creates. If you do wish to make a green smoothie, you could add spinach or kale. Other seasonal fruit like peaches, blueberries, strawberries, or nectarines would be great in this smoothie. Anything you do choose - make sure to have fun!
Blend the milk, raspberries, banana, coconut, ginger, and ice in a high-speed blender until smooth. Pour into a bowl and top with your favorite toppings. Today it was sliced banana, raspberries, coconut flakes, sliced almonds, and chia seeds. Enjoy!
