Happy First Day of Spring! I can’t believe spring is already here. Today started off with a cold morning chill and overcast skies, but I do not fear that spring is right around the corner. In the grey gloom, daffodils and cherry blossoms have already started to bloom. With warmer weather imminent and budding flowers perfuming the air, I thought I’d share a bright and refreshingly sweet smoothie to celebrate spring: Today I’m making a Pineapple-Mango Mint Smoothie!
I was tempted to call this a Mojito Smoothie, because it tastes likes very much like its cousin. Minty, citrusy and sweet, this smoothie is the perfect warm weather refreshment. The ingredients in this smoothie are few and simple: pineapple, mango, banana, citrus, fresh mint, and raw coconut water. That’s it! Pineapple is both sweet and tart — one of my favorite fruits. Mango is also rich and sweet, banana as well. For the citrus, I usually add whatever I have around. Lime, lemon or orange would work well. I’ve tried this recipe with all of them and they all taste great. Citrus adds that extra punch, a little tang, that cuts the richness and sweetness of the smoothie. Lemon is definitely the strongest. Orange the sweetest. And lime, creates the most “mojito” flavor of them all. Because these tropical fruits are dense and sweet, I added a handful of mint. It compliments the citrus and the tropical fruits beautifully, while not overpowering the flavor. The mint adds freshness and elevates all the flavors. I used raw coconut water for the liquid, but you could use coconut milk for a creamier andricher smoothie. This recipe is flexible and you can really adjust the ingredients and amounts to your liking! I topped mine with fresh fruit, chia seeds, coconut, pistachios, and goji berries, but you can make this with whatever toppings you like!
I wanted to create a bright and uplifting smoothie to celebrate spring’s arrival. Although this winter has been much milder than most -- with only a few storms and little snow, I am ready for spring and its abundance of blooming flowers and local produce! But for now, sweater still on, I will enjoy this delicious and nutritious Pineapple Mango Mint Smoothie bowl! What are you most excited for this spring? In a blender, add the pineapple, mango, banana, coconut water, mint, citrus, and ice. Blend until smooth. Pour in a cup or to make a smoothie bowl, pour into a bowl and add whatever toppings you like! I added sliced bananas, goji berries, raw pistachios, fresh pineapple, chia seeds, coconut flakes, and fresh mint. Enjoy!
1 heaping cup of fresh pineapple, cubed
1/2 cup frozen mango
1 frozen medium banana
1/2 cup raw coconut water
1 small handful of fresh mint leaves (about 1/4 cup loosely packed)
juice of 1 lime, lemon, or orange
a small handful of ice
