If you haven't already noticed, I love making smoothie bowls. They require very little time and are incredibly versatile. Not to mention, smoothies can be a great source of nutrients and vitamins, as an afternoon pick-me-up or morning boost. These colorful concoctions can be made with a variety of ingredients and are a great way to use extra fruits and vegetables you have around so they don't go bad. Usually, I like a combination of a nut/soy milk + greens (like spinach or kale) + sweet fruit (dates/mango/berries) + a banana (always!) + ice. The options are endless and can be personalized to each his/her own liking.
One of my favorites is a peanut butter green smoothie. Because who doesn't love a little peanut butter?! You could obviously use any nut butter you have around but I like peanut butter because it adds a creamy, rich flavor. The nuttiness of the peanut butter combined with the sweet, rich flavors of mango and the clean taste of spinach make for a beautifully balanced smoothie. Top with any you like and enjoy!

pistachios / almonds
fresh fruit (bananas, blueberries, raspberries, cherries)
flax / chia Seeds
In a high-power blender, add the almond milk, spinach, banana, mango, peanut butter, chia seeds, and ice and blend until smooth. If the consistency is too thick, add water, if too thin, add some banana. Pour the smoothie in a bowl and top with your favorite toppings! Today, I had cherries, blueberries, banana, chia seeds, and coconut, but you can add whatever you like. Enjoy!
