One of the great joys in life comes from sweet butter. What else is better than vanilla, honey and butter? When all three are combined. Honey butter is great to have on hand - it adds a delicate and saccharine flavor to your dish. You can use it on pancakes, bread, biscuits, muffins, bagels, oatmeal, granola, popcorn, roasted nuts, or just on a simple piece of toast.
For this recipe, I am using butter, honey, vanilla extract, and cinnamon. If you don't like honey, you can use agave, simple syrup, maple syrup, or any sweetener you like! You could also use almond extract or a lemon zest if you'd like. If cinnamon's not your thing, you could substitute with ginger, nutmeg, anise, or leave it out all together. I leave it up to you! In a bowl, whisk together butter, honey, vanilla, and cinnamon until light and fluffy, about 5 minutes.* On a sheet of plastic wrap, spoon on the mixture and roll the butter into a log. Refrigerate for 2 hours before use. Serve and enjoy!
*You can use an electric hand mixer or stand mixer if you have it. Just whip the butter on medium speed until light and fluffy, about 3-5 minutes.

1 stick unsalted butter, softened
2 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
